French Roast Duck Recipe
Whole duck, about 5 lbs
Salt and freshly ground pepper
1 orange, cut into wedges
2 sprigs of fresh rosemary
6 garlic cloves, peeled and crushed
1. Preheat the oven to 425°F.
2. Rinse the duck inside and out and pat dry with paper towels.
3. Season the duck inside and out with salt and pepper.
4. Stuff the orange wedges, rosemary, and garlic inside the duck.
5. Place the duck breast-side up in a roasting pan.
6. Roast the duck for 15 minutes at 425°F, then reduce the oven temperature to 350°F and continue roasting for 1 to 1 1/2 hours or until the internal temperature of the duck reaches 165°F.
7. Remove the duck from the oven and let it rest for 10 minutes before carving and serving.
