
French Roast Duck Recipe |

Ingredients |
Whole duck, about 5 lbs |
Salt and freshly ground pepper |
1 orange, cut into wedges |
2 sprigs of fresh rosemary |
6 garlic cloves, peeled and crushed |
Instructions |
1. Preheat the oven to 425°F. |
2. Rinse the duck inside and out and pat dry with paper towels. |
3. Season the duck inside and out with salt and pepper. |
4. Stuff the orange wedges, rosemary, and garlic inside the duck. |
5. Place the duck breast-side up in a roasting pan. |
6. Roast the duck for 15 minutes at 425°F, then reduce the oven temperature to 350°F and continue roasting for 1 to 1 1/2 hours or until the internal temperature of the duck reaches 165°F. |
7. Remove the duck from the oven and let it rest for 10 minutes before carving and serving. |
