Jamaican Curry Goat Recipe
Ingredients
– 2 lbs. goat meat, cut into cubes
– 2 tablespoons curry powder
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon ginger, grated
– 2 tablespoons vegetable oil
– 2 cups water
– 2 potatoes, peeled and chopped
– 1 carrot, peeled and chopped
– 1 scotch bonnet pepper, seeded and chopped
– Salt and pepper to taste
Instructions
1. In a large bowl, season the goat meat with curry powder, salt, and pepper.
2. Heat the vegetable oil in a large pot over medium heat.
3. Add the seasoned goat meat to the pot and brown on all sides.
4. Add the onion, garlic, and ginger to the pot and sauté until softened.
5. Pour in the water and bring to a boil.
6. Reduce heat and simmer for 1-2 hours, or until the meat is tender.
7. Add the chopped potatoes, carrots, and scotch bonnet pepper to the pot and continue to simmer until the vegetables are soft.
8. Serve hot over rice.
Tips
– For added flavor, marinate the goat meat in the curry powder and other seasonings overnight.
– If you can’t find goat meat, lamb can be used as a substitute.
– Adjust the amount of scotch bonnet pepper to your desired level of heat.
