Ingredients |
– 2 lbs. goat meat, cut into cubes |
– 2 tablespoons curry powder |
– 1 onion, chopped |
– 2 cloves garlic, minced |
– 1 tablespoon ginger, grated |
– 2 tablespoons vegetable oil |
– 2 cups water |
– 2 potatoes, peeled and chopped |
– 1 carrot, peeled and chopped |
– 1 scotch bonnet pepper, seeded and chopped |
– Salt and pepper to taste |
Instructions |
1. In a large bowl, season the goat meat with curry powder, salt, and pepper. |
2. Heat the vegetable oil in a large pot over medium heat. |
3. Add the seasoned goat meat to the pot and brown on all sides. |
4. Add the onion, garlic, and ginger to the pot and sauté until softened. |
5. Pour in the water and bring to a boil. |
6. Reduce heat and simmer for 1-2 hours, or until the meat is tender. |
7. Add the chopped potatoes, carrots, and scotch bonnet pepper to the pot and continue to simmer until the vegetables are soft. |
8. Serve hot over rice. |
