Majorcan Lamb Recipe
– 2 lbs. lamb, cut into cubes
– 1 onion, chopped
– 4 cloves garlic, minced
– 1 red bell pepper, chopped
– 1 green bell pepper, chopped
– 1 tomato, chopped
– 2 tablespoons olive oil
– 1 teaspoon paprika
– 1 teaspoon cumin
– 1 teaspoon dried oregano
– 1/2 teaspoon cinnamon
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 cup chicken broth
– 1/2 cup dry white wine
– Juice of 1 lemon
1. Preheat the oven to 375°F.
2. In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat.
3. Add the lamb to the pot and cook until browned on all sides, about 5 minutes.
4. Add the onion and garlic to the pot and cook until softened.
5. Stir in the paprika, cumin, oregano, cinnamon, salt, and pepper.
6. Add the bell peppers and tomato to the pot and cook for 2-3 minutes.
7. Pour in the chicken broth, white wine, and lemon juice.
8. Bring the mixture to a simmer, cover the pot, and transfer to the oven.
9. Bake for 1-1.5 hours, or until the lamb is tender and the sauce has thickened.
10. Serve hot over rice or with crusty bread.
– This dish can also be made in a slow cooker or Instant Pot.
– For a spicier version, add a diced jalapeño pepper to the pot.
