Roast Goat Recipe
1 whole goat, cleaned and dressed
Salt and black pepper, to taste
1/4 cup olive oil
6 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons fresh thyme, chopped
1/4 cup red wine
1. Preheat the oven to 350°F.
2. Season the goat inside and out with salt and black pepper.
3. In a small bowl, mix together the olive oil, garlic, rosemary, and thyme. Rub the mixture all over the goat.
4. Place the goat in a roasting pan and pour the red wine over it.
5. Roast the goat for about 2 1/2 to 3 hours or until a meat thermometer inserted into the thickest part of the meat registers 165°F.
6. Let the goat rest for 10-15 minutes before carving and serving. Enjoy!

Note: Cooking times may vary depending on the size and type of goat used. It’s recommended to use a meat thermometer to ensure the goat is fully cooked before serving.
