Ingredients |
– 2 pounds of beef chuck roast, cut into 1-inch cubes |
– 1 tablespoon of vegetable oil |
– 1 onion, diced |
– 3 cloves of garlic, minced |
– 2 carrots, peeled and diced |
– 2 stalks of celery, diced |
– 1 tablespoon of chili powder |
– 1 teaspoon of ground cumin |
– 1/2 teaspoon of smoked paprika |
– Salt and pepper to taste |
– 1 can (14.5 oz) of diced tomatoes |
– 2 cups of beef broth |
– 1 can (15 oz) of black beans, drained and rinsed |
Instructions |
1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. |
2. Add the beef and cook until browned on all sides. |
3. Add the onion, garlic, carrots, and celery, and sauté until tender. |
4. Stir in the chili powder, cumin, smoked paprika, salt, and pepper. |
5. Add the diced tomatoes and beef broth, and bring to a simmer. |
6. Reduce the heat to low and let simmer for 2-3 hours, or until the beef is tender. |
7. Add the black beans and heat through. |
8. Serve hot with your favorite toppings, such as shredded cheese, sour cream, or avocado. |
