Western Style Beef Recipe
Ingredients
– 2 pounds of beef chuck roast, cut into 1-inch cubes
– 1 tablespoon of vegetable oil
– 1 onion, diced
– 3 cloves of garlic, minced
– 2 carrots, peeled and diced
– 2 stalks of celery, diced
– 1 tablespoon of chili powder
– 1 teaspoon of ground cumin
– 1/2 teaspoon of smoked paprika
– Salt and pepper to taste
– 1 can (14.5 oz) of diced tomatoes
– 2 cups of beef broth
– 1 can (15 oz) of black beans, drained and rinsed
Instructions
1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
2. Add the beef and cook until browned on all sides.
3. Add the onion, garlic, carrots, and celery, and sauté until tender.
4. Stir in the chili powder, cumin, smoked paprika, salt, and pepper.
5. Add the diced tomatoes and beef broth, and bring to a simmer.
6. Reduce the heat to low and let simmer for 2-3 hours, or until the beef is tender.
7. Add the black beans and heat through.
8. Serve hot with your favorite toppings, such as shredded cheese, sour cream, or avocado.
Tips
– This recipe can also be made in a slow cooker. Simply add all the ingredients to the slow cooker and cook on low for 6-8 hours or high for 4-5 hours.
– Use different cuts of beef such as sirloin or round steak.
– Try adding corn, bell peppers, or other vegetables for extra flavor and nutrition.
